Global Cuisines: Food Science and Health

This course discusses elements impacting food safety and human health through the lens of global cuisine. Faculty will introduce related concepts in food and health sciences and illustrate how advancements in science, technology, and globalization impact food, health, and well-being. Students will develop an appreciation of cuisines and sound judgement on dietary practices for health and well-being.
